Wheat flour ۲ ۱/۲ cups (260 gr.)
Rice flour ۱ ۱/۲ cups (130 gr.)
Oil ۲/۳ cup (100 gr.)
Butter ۱ cup (160 gr.)
Icing sugar ۲ ۱/۴ cups (250 gr.)
Cardamom (powdered) ۱ tbsp. (4 gr.)
Walnut (coarsely) ۲ ۱/۲ cups (250 gr.)
Cocoa power ۱/۴ cup (14/5 gr.)
Sift the wheat flour and rice flour, sauté them over medium heat separately to remove the smell of rawness and change in color. Again sift the flours and mix together. Heat the oil and butter over medium heat until hot. Add flour mixture to it, stirring constantly until golden brown (be sure that heat is medium). Remove from heat, set aside for 10 minutes to cool. Gradually knead in icing sugar, cardamom and walnut until smooth and sticky. Divide in half. Mix the half with cocoa powder until smooth. Place each one separately between 2 plastic wraps and rolls out with rolling pin into rectangular until 3 mm. thick. Lightly place one on the other, remove its plastic wrap, and then wrap them with the under plastic wrap, during this time, remove the under plastic wrap. Refrigerate for some minutes until little firmed (this process avoid blending the colors for cutting) cut into 1cm slices with sharp knife, place on serving plate. Decorate with walnut halves, as desired.
